Farmers should choose the time of harvest in the morning. Then, the fruits and vegetables will stay crisp and stored longer and won’t limp from the afternoon heat. This is especially important for leafy greens such as lettuce, fresh parsley, chard, and basil. This also applies to crisp fruit vegetables like peas and anything in the cabbage family like radishes and broccoli. The next ideal time to harvest is in the evening when the heat of the afternoon sun begins to subside. Other vegetables, such as peppers, tomatoes and zucchini, are less sensitive to wilting, so they can be enjoyed later in the day as root vegetables like carrots, but make sure they are kept out of the sun and in the fridge quickly.

Once a crop begins to produce, check the garden every day! Picking vegetables as they ripen often encourages the plant to produce more. Otherwise, many vegetables will bolt and swell because they “think” they are done. Also, pinch or cut back frequently to keep herbs productive (and keep them from flowering).

You can always preserve an extremely abundant harvest. For instance, you can blanch the green beans in boiling water for one minute, cool in ice water, and freeze. Likewise, you can freeze the squash and zucchini or make them into zucchini bread.

Green beans freeze well. Blanch first (put a pot of boil water for a minute and then cool in ice water) to keep the colour bright and the texture crisp.

Look for small to medium-sized roots (1-1/2 to 3 inches in diameter). Farmers can harvest beets at any time, but the larger ones will often be hard and woody. Beets should have firm flesh, be smooth, show a rich colour, and have healthy green leaves (not wil?ted). If you eat beets for their greens, you can harvest any time their leaves are 4 to 6 inches long.

For best flavour in hot weather, contain the beets adequately watered and don’t leave them in the ground so long that they become woody and pithy.

  1. Broccoli

Pick when broccoli flower heads are dark blue-green and large with compact and tightly closed buds – pick before the buds turn yellow. Harvest the broccoli in the morning. Cut 6 – 7 inches below the flower head. If the top and bottom turn yellow, the broccoli is overripe. The stalks should be tough, and the greens should be green and fresh (not limp). The small, tender leaves are also nutritious.

If your broccoli blooms with yellow flowers, it will be hard and woody. Cut the plant about halfway down the stalk to encourage continued production of lateral shoots. Keep the plants well-watered to prevent them from developing a bitter or sulfuric taste. The best-tasting broccoli is produced in cold climates.
